Colorful Vegetable Soup with Potatoes

Ingredients

  • 2 onions
  • 2 Garlic cloves
  • 200 g Green beans
  • 300 g waxy potatoes
  • 2 tbsp Rapeseed oil
  • 1 tsp tomato paste
  • 1 l vegetable broth
  • 0.5 handful bean herb
  • 4 tomatoes
  • 4 tbsp heavy cream (30% fat)
  • 2 stalks Parsley
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Peel and finely chop onions and garlic. Wash, trim beans and cut into ~4 cm pieces. Peel potatoes and dice small.

    Heat oil in a large pot and sauté onions with garlic. Briefly cook tomato paste, then add broth. Tie bean herb with kitchen twine and add to the pot. Add potatoes and beans; simmer gently for about 10 minutes.
