Colorful Vegetable Salad with Grilled Halloumi

Ingredients

  • 4 ripe red tomatoes
  • 2 ripe yellow tomatoes
  • 150 g green beans
  • 70 g arugula
  • 0.5 bunch Parsley
  • 100 g black olives
  • 1 Red Onion
  • 3 tbsp olive oil
  • 4 tbsp white balsamic vinegar
  • 2 tbsp vegetable broth
  • Salt
  • Pepper
  • 500 g Halloumi

Instructions

    Wash the tomatoes, blanch and peel them. Then cut into wedges and halve each segment. Wash the green beans, optionally halve them, and boil in salted water for 8 minutes. Drain, rinse with cold water, and let drain.

    Wash the arugula, shake dry, then wash parsley, shake dry, and remove leaves. Drain olives, peel onion, halve it, and slice into strips.

    Combine all salad ingredients, season with salt and pepper, and divide onto four plates. Mix the dressing ingredients together and drizzle over the salad. Slice the cheese and grill in an oven, on a grill, or in a grill pan until golden yellow; arrange on top of the salad and serve.
