Ingredients
- 400 g Potatoes
- Salt
- 0.5 bunch spring onions
- 1 cucumber
- 1 yellow bell pepper
- 150 g tomatoes
- 4 tbsp olive oil
- 1 tbsp vinegar
- 1 tsp Mustard
- Pepper
- 100 g feta cheese (45% fat in the product)
Instructions

Cook potatoes in boiling salted water for 15–20 minutes until tender, then cool, peel and slice.

Meanwhile, clean and wash spring onions, cucumber, bell pepper and tomatoes. Slice spring onions into rings and cut the rest into slices or cubes. Whisk olive oil with vinegar and mustard, season with salt and pepper. Crumble feta cheese.

Combine potatoes with vegetables and dressing. Season with salt and pepper, top salad with feta and serve.
