Potato Salad with Celery Stalks and Chives

Ingredients
- 800 g small firm-boiling potatoes
- 2 stalks celery
- 100 ml meat broth
- 3 tbsp white wine vinegar
- 2 tbsp lemon juice
- 3 tbsp sunflower oil
- Salt
- sugar
- 1 bundle chives

Steam the potatoes for about 25 minutes. Then peel and let them cool slightly. Wash, trim, and slice the celery thinly or into shavings. Warm the broth and add the celery. Remove from heat, stir in the vinegar and lemon juice. Season with salt, pepper, and sugar.

Slice the potatoes and pour the broth over them. Gently fold in and let sit for 10 minutes. Then whisk in the oil and taste again. Add the chives and serve warm on plates.
