Colorful Mashed Potatoes

Ingredients

  • 1 kg starchy potatoes
  • 400 ml milk
  • 3 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 300 g broccoli (or 300 g frozen, heated spinach puree)
  • 150 g diced tomatoes
  • 1 tbsp Tomato Paste
  • 500 g carrots or pumpkin
  • 300 g onions
  • 2 tbsp smoked bacon cubes

Instructions

    Peel the potatoes and cook them in salted water for about 25 minutes. Drain, let steam off slightly, then mash with a potato masher.

    Pour heated milk over the mashed potatoes and whisk vigorously, adding butter as you go. Season with nutmeg, pepper, and salt to taste.

    Replace portions of the mashed potatoes with steamed vegetables to create colorful variations:
