Colorful Cabbage Soup

- 0.25 head white cabbage
- 2 Celery stalks
- 3 spring onions
- 1 small leek stalk
- 4 Carrots
- 400 g cherry tomatoes
- Salt
- Pepper (freshly ground)
- olive oil (cold pressed)

Remove the core from the cabbage and cut the leaves into fine strips. Dice the core into small cubes. Wash the celery stalks and slice them thinly. Clean the leek and slice it thinly. Trim, wash, and slice the spring onions. Peel the carrots and slice them.

Heat 4-5 tablespoons of oil in a large pot and sauté all the vegetables while stirring. Add water (about one-third more than the pot’s capacity), season with salt, and bring to a boil.

Add the cherry tomatoes, reduce the heat, cover, and cook for 20-25 minutes until done. Season with pepper and thyme. Stir in 1 tablespoon of cold oil and serve immediately. Fresh white bread pairs well.
