Cold White Bean Soup

Ingredients
- 150 g celery root
- 2 shallots
- 4 Garlic cloves
- 3 tbsp olive oil
- 400 ml Vegetable broth
- 400 ml white beans (1 can)
- Salt
- ground pepper
- 100 ml heavy cream
- 1 tsp sherry vinegar
- basil (for garnish)
Instructions

Peel and finely chop the celery root, shallots, and garlic. Heat the olive oil in a pot and sauté the prepared vegetables until the shallots become translucent.

Deglaze with vegetable broth, rinse the beans in a sieve and add them to the pot. Season with salt and pepper and simmer for about 10 minutes.

Add the heavy cream, bring to a boil once, then puree the contents of the pot using a blender. Strain through a fine sieve, adjust seasoning, and stir in the sherry vinegar.

Serve well chilled, garnished with basil leaves.
