Ingredients
- 500 ml dry white wine (Riesling)
- 500 ml veal broth
- 4 shallots
- 3 sage leaves
- 400 g heavy cream
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 2 tsp sage blossoms
- 2 tsp lemon zest

Peel and finely chop the shallots, then simmer with wine, broth, and sage leaves covered for about 30 minutes.

Strain the soup through a sieve and return it to the pot.

Whisk the cream until stiff, fold into the soup, season with salt, sugar, and pepper, and serve immediately garnished with sage blossoms and lemon zest.
