Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp butter
  • 1 l buttermilk
  • Salt
  • Pepper (freshly ground)
  • 4 ripe tomatoes
  • 2 tbsp olive oil
  • 6 slices toast bread
  • 50 g mayonnaise
  • 100 g grated cheese (e.g., Gouda)
  • 3 sprigs fresh parsley

Instructions

    Peel and finely dice the onion and garlic, then sauté in hot butter until translucent. Pour in buttermilk and simmer for 2-3 minutes; season with salt and pepper.

    Meanwhile blanch the tomatoes briefly in boiling water, shock them in cold water, peel, puree with olive oil, and stir into the buttermilk soup. Chill the soup for several hours.
