Ingredients
- 3 slices white bread (crumbs removed)
- 1 onion
- 3 Garlic cloves
- 0.5 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 800 g peeled tomatoes (1 can)
- 1 tsp ground cumin
- 1 tbsp White Wine Vinegar
- 4 tbsp olive oil
- Salt
- Pepper
- parsley (for garnish)

Coarsely cube the white bread. Peel and coarsely cube the onion and garlic. Wash the cucumber and bell peppers. Dice half of each into fine cubes, cut the other halves into larger pieces. Blend the vegetable pieces, onion, garlic, peeled tomatoes, bread cubes, cumin, and vinegar in a blender, gradually adding the oil. Season with salt and pepper. Stir finely diced vegetables into the soup and chill. Serve garnished with parsley.
