Cold Spanish Soup

Ingredients
- 2 slices of toast bread
- 0.5 small cucumber
- 1 onion
- 1 red bell pepper
- 3 Garlic cloves
- 1 can of pizza tomatoes (ca. 400 g)
- 4 tbsp olive oil
- 150 ml Vegetable broth
- Salt
- Pepper
- chili powder
- basil (for garnish)

Remove the crusts from the toast bread slices. Peel, halve lengthwise, deseed, and chop the cucumber into small pieces. Peel the onion, wash and peel the pepper with a paring knife, then cut both into small pieces. Peel the garlic cloves. Place all prepared ingredients except one garlic clove in the food processor. Add the pizza tomatoes and blend finely. While blending, gradually pour in 3 tbsp oil and the broth until the gazpacho becomes smooth. Season with salt, pepper, and chili powder. Chill for at least 30 minutes.

Slice the remaining garlic clove thinly and wash and dry the basil leaves. Pour the gazpacho into four glasses, garnish with the garlic slices and basil, and serve.
