Cold Potato Leek Soup

Ingredients
- 1 stalk leek
- 2 Spring Onions
- 400 g waxy potatoes
- 150 g celeriac
- 1 Garlic clove
- 2 tbsp butter
- 800 ml vegetable broth
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
Instructions

Slice the leek lengthwise, rinse, clean and cut into thin rings. Wash, trim and slice the spring onions into fine rings as well.

Peel the garlic and finely chop it. Peel and dice the potatoes and celeriac into small cubes.

In a pot melt the butter and sauté the garlic until translucent. Add the vegetable cubes and leek, cook briefly, then pour in the broth. Season with salt and pepper and simmer over medium heat for about 15 minutes. Purée with a hand blender, season with nutmeg, let the soup cool, and chill completely in the refrigerator.

Serve in small bowls, sprinkle with spring onions and freshly ground pepper. Offer crème fraîche on the side if desired.
