Ingredients
- 800 g cold pork filet roast
- 1 shallot (finely diced)
- 1 garlic clove (finely chopped)
- 50 g spinach
- 1 splash white wine
- 0.5 bunch Parsley
- 1 tbsp Olive Oil
- 100 ml heavy cream
- 2 tbsp crème fraîche
- Salt
- pepper (ground)
- nutmeg (grated)
Instructions

Sauté shallot and garlic in hot oil, add spinach and deglaze with a splash of white wine. Pour in cream and reduce. Stir in parsley and briefly puree the sauce. Add crème fraîche, season with salt, pepper, and nutmeg.
