Ingredients
- 400 g peas (fresh or frozen)
- Salt
- 1 Garlic clove
- 1 tsp Honey
- 20 g pine nuts
- 200 ml Buttermilk
- 600 ml Vegetable Broth
- Ice cubes
- 2 sprigs Mint
- Lemon juice
- Salt
- Cayenne pepper
- 100 g cooked crayfish

Wash or thaw the peas and blanch them in salted water for about 4 minutes. Cool quickly and drain. Peel the garlic clove and combine it with the peas, honey, pine nuts, buttermilk (up to 4 tbsp), vegetable broth, and ice cubes as desired in a blender.

Tear off mint leaves, set aside some for garnish, and blend the rest with the other ingredients until smooth. Season with lemon juice, salt, and cayenne pepper. Serve on plates, place the crayfish in the center, drizzle with remaining buttermilk, sprinkle with cayenne pepper, and garnish with mint.
