Ingredients

  • 2 cucumbers
  • 0.5 Pineapple
  • 1 Shallot
  • 4 coriander leaves
  • 250 ml mineral water
  • 2 limes (juice)
  • 2 tbsp avocado oil
  • 1 tsp salt
  • chili flakes

Instructions

    Peel the cucumbers, cut them lengthwise, scoop out the seeds and dice. Peel the pineapple, remove the core and dice it. Peel the shallot and roughly dice it. Rinse the coriander leaves, shake dry, pluck the leaves and finely chop them.

    Add the cucumber, pineapple, shallot, water, lime juice, oil, salt and a pinch of chili to the blender and puree. Fold in the chopped coriander and refrigerate for at least 2 hours. Taste before serving and adjust seasoning if needed.
