Ingredients
- 3 Avocados
- 800 ml meat broth (from the jar)
- 0.125 l white wine
- 100 g crème fraîche
- 1 tbsp Lemon Juice
- 1 red bell pepper
- coriander leaves

Halve the avocado, remove the seeds, cut the flesh into pieces and blend with white wine and lemon juice in a blender. Bring the meat broth to a boil, then remove from heat and whisk the avocado puree into it. Stir in crème fraîche, salt and pepper. Chill for 30 minutes.

When serving, spoon the chilled soup onto plates and garnish with sliced bell pepper wedges and coriander leaves.
