Ingredients
- 1 kg tomatoes
- 2 shallots
- 2 Garlic cloves
- Salt
- Pepper
- 2 tsp warm vegetable broth
- 2 bunches basil
- 1 bunch parsley
- 4 tbsp olive oil
- 20 g grated Parmesan
Instructions

Cut the tomatoes crosswise, blanch in boiling water, cool, peel, halve and seed. Peel the shallots and garlic cloves and finely chop them.

Blend tomato flesh, onions and garlic in a blender and season with salt, pepper and vegetable broth. Wash basil and parsley, shake dry and finely chop; set aside some basil leaves.

Mix the soup with the herbs, garnish with basil leaves and sprinkle grated parmesan cheese.
