Coffee Parfait

Ingredients
- 100 ml coffee (cold)
- 40 ml cognac
- 300 g butter cookies
- 2 yolks
- 2 Eggs
- 50 ml strong coffee
- 100 g sugar
- 500 g mascarpone
- 150 ml whipping cream
- cocoa powder (for dusting)

Mix the coffee with the liqueur and drizzle over the cookies. Line the bottom of a loaf pan, covered with plastic wrap, with one layer of cookies. If desired, cut some cookies in half to cover the base tightly.

Separate the eggs for the ice cream. Whisk all yolks over a hot water bath with the coffee and sugar until white‑creamy (do not let it get too hot!). Then whisk over a cold water bath to chill and fold in the mascarpone. Beat the egg whites stiffly and fold into the mixture. Also beat the cream stiffly and fold in. About one third of the mixture goes into the pan on top of the cookies, spread smoothly. Repeat with another layer of drizzled cookies and the process two more times until all mixture is used and finished with a last cookie layer. Cover with plastic wrap and freeze for at least 4 hours. About 10 minutes before serving remove from the pan, peel off the wrap, and dust with cocoa.
