Cherry Ice Bomb

Ingredients
- 125 g cherries (jar, pitted)
- 40 ml cherry brandy
- 400 g cherry cream ice cream
- 400 g Vanilla Ice Cream
- 30 g poppy seed cake (sweetened and ground)
- whipped cream
- lemon balm leaf
- Cocktail cherry

Marinate the cherries with cherry brandy for about 1 hour. Cut the cherry ice cream into large pieces, then blend with an electric hand mixer until creamy. Spread a uniform layer of this mixture in the ice bomb mold and freeze for at least 1 hour. Next, whisk half of the vanilla ice cream until smooth, fold in drained cherries, spread as a second layer over the cherry ice cream, and freeze again for 1 hour.

Finally, blend the remaining vanilla ice cream with the poppy seed mixture until creamy and fill the center of the frozen layers.

Cover and place back in the freezer until ready to serve. When serving, briefly warm in water, then pour out. Garnish with whipped cream swirls, lemon balm leaves, and cherries.
