Cod Cutlets

Ingredients
- 4 cod cutlets (ca. 1 kg fish) or one large piece of cod
- 1 lemon (juice)
- Salt
- Pepper (freshly ground)
- 3 bulbs fennel
- 4 Carrots
- 250 g heavy cream
- 2 stalks dill
- 0.5 bunch Basil

Wash the cod, pat dry, drizzle with lemon juice and rub in salt and pepper.

Wash the fennel, cut off the greens and set aside, halve the bulbs and slice into thin strips. Peel and lengthwise halve the carrots, then dice finely. Blanch the vegetables in salted water for 3 minutes, drain.

Mix the cream with the well-drained vegetables in a large baking dish, season with salt and pepper. Place the cod cutlets on top of the vegetable mixture.

Wash the fennel greens, dill, and basil, finely chop them and sprinkle half over the fish and vegetables. Preheat the oven to 200 °C and bake for about 15‑20 minutes until cooked through. Before serving, scatter the remaining herbs over the dish. Serve garnished with basil.
