Cod with Herb Crust and Green Beans
Low Carb at its finest: Try the cod with herb crust and green beans from Spoonsparrow!
Ingredients
- 640 g cod fillet (4 fillets about 160 g each)
- Salt
- pepper (ground)
- 3 tbsp horseradish (jarred)
- 2 Spring Onions
- 2 tbsp freshly chopped watercress
- 1 tbsp freshly chopped dill
- 1 tbsp freshly chopped parsley
- 75 g whole‑grain breadcrumbs
- 2 tbsp olive oil
- 600 g green beans
- 1 tbsp butter
- lemon wedges for serving

Rinse the fish fillets, pat dry and season with salt and pepper. Place on a baking sheet lined with parchment paper and spread horseradish over them. Trim, wash and finely chop the spring onions. Mix the chopped herbs, breadcrumbs and olive oil; season with salt and pepper. Spread this mixture over the cod fillets and bake in a preheated oven at 220 °C (fan: 200 °C) for about 10 minutes until golden brown.

Boil the green beans in salted water for about 8 minutes to blanch them. Drain and toss in a pan with melted butter, seasoning with salt and pepper.

Remove the fish from the oven and arrange on plates. Place the buttery green beans beside it and serve each with a lemon wedge.
