Veal with Spinach

Ingredients

  • 600 g fresh flat-leaf spinach
  • 1 onion
  • 800 g veal fillet
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp Flour
  • 4 tbsp Vegetable oil
  • 2 tbsp butter
  • nutmeg
  • a pinch of mild paprika powder

Instructions

    Preheat the oven to 150°C fan.

    Wash, rinse and spin dry the spinach. Peel and finely chop the onion.

  3. 3.

    Pat the fillet dry, season with salt and pepper. Heat the oil in a pan and sear the meat all around until browned. Remove from the pan, wrap in foil and place in the oven. Roast for about 25-35 minutes (depending on thickness) until pink inside.

    Sauté the onion in butter in a wide pot until translucent. Add the spinach and let it wilt. Season with salt, pepper, a touch of nutmeg and paprika.

    Remove the fillet from the oven, let it rest in the foil for about 5 minutes, slice and serve with the spinach.
