Cod with Aioli and Bean Medley

Ingredients
- 3 cloves garlic
- 2 tbsp lemon juice
- 1 egg
- 2 tbsp olive oil
- 120 ml rapeseed oil
- Salt
- 4 cod fillets (150 g each)
- Pepper
- 500 g thick beans (fresh split)
- 1 Spring onion

For the aioli, peel the garlic and combine with lemon juice, egg and olive oil in a tall container. Blend with a stick blender until creamy, gradually adding rapeseed oil. Season with salt.

Trim the cod fillets, pat dry, season with salt and pepper, place in a steamer basket and steam over boiling water covered for about 10 minutes.

Meanwhile wash the beans and cook in salted boiling water on medium heat for about 2 minutes. Clean and slice the spring onion into rings. Drain the beans, let them drain well, remove skins and divide among four bowls. Spoon some aioli over each bowl, place a fillet on top and sprinkle with spring onion rings. Serve remaining aioli in small dishes.
