Cod Fish Soup

Ingredients
- 1 kg mixed fish (cod and e.g. sea bass, mackerel)
- 1 lemon (juice)
- 3 onions
- 1 Garlic clove
- 350 g waxy potatoes
- 1 Carrot
- 2 Tomatoes
- 1 handful oregano
- 1 handful parsley
- 1 bay leaf
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 150 g shrimp (peeled and deveined)

Wash the fish, pat dry and cut into larger pieces. Drizzle with 3-4 tbsp lemon juice and refrigerate.

Peel the onions and garlic. Slice the onions in half into thin rings, slice the garlic into rounds. Peel the potatoes and carrot and cut into thick slices. Blanch the tomatoes, cool, peel, core and dice finely. Rinse the oregano, set aside a few sprigs for garnish, bundle the rest with rinsed parsley and bay leaf.

Layer the potatoes, onions with garlic, carrots and tomatoes along with the herb bundle in a large pot. Drizzle the olive oil over them and pour in about 1 l water. Cover and simmer on low heat for about 25 minutes. Then slide the fish pieces between the vegetables, add more water if needed and cook another 10-15 minutes. Rinse the shrimp and add in the last 5 minutes. Stir the soup as little as possible.

Remove the herbs from the finished soup and season with salt, pepper and remaining lemon juice. Serve the cod fish soup garnished with leftover oregano.
