Cod with Herb Filling

Ingredients
- 600 g small new potatoes
- Salt
- 6 Spring Onions
- 1 handful parsley
- 1 handful chervil
- 2 stalks dill
- 1 tbsp ground almond kernels
- 2 Tbsp grated Parmesan
- 6 tbsp Olive oil
- a splash lemon juice
- Pepper
- 4 cod fillets (about 160 g each)
- 100 ml dry white wine
Instructions

Wash the potatoes thoroughly and cook them in salted water for about 20 minutes.

Wash, trim, and finely chop the spring onions; remove the green parts. Rinse, shake dry, and finely chop the herbs. Mix together with the chopped spring onions, almonds, parmesan, and 2 tbsp oil, seasoning with lemon juice, salt, and pepper.

Rinse the fish and pat dry. Place fillets skin side down on a work surface, spread the herb cream over them, fold the fillet closed, secure with toothpicks, and place in an oiled steamer basket. Season with salt and pepper and drizzle 1 tbsp oil. Steam over boiling water with the lid closed for 8-10 minutes.

Sauté the spring onion greens briefly in 2 tbsp hot oil, deglaze with wine, let reduce slightly, then season with salt and pepper. Halve the potatoes as desired and toss them in the remaining oil in a pan, seasoning with salt and pepper.

Serve the fish (without toothpicks) arranged with spring onions and potatoes.
