Ingredients

  • 4 limes
  • Basil
  • 60 g breadcrumbs
  • 30 g soft butter
  • salt, pepper
  • 400 g large plum tomato
  • 2 tbsp olive oil
  • 4 cod fillets (each 180g)

Instructions

    Peel the limes so that the white rind is completely removed. Separate the fillets from their skin. Chop half of the fillets and the basil, then mix with breadcrumbs and soft butter to form a paste. Season with salt and pepper.

    Blanch the tomatoes in boiling water for 30 seconds, shock them in ice water, peel, halve, and seed them. Place them in an oven‑proof dish, season with salt and pepper, and drizzle with olive oil.

    Place the fish fillets on top of the tomatoes, season with salt and pepper, and spread the lime paste over them. Arrange the remaining fillet pieces on the tomatoes and bake in a hot oven at 220°C on the second rack from below for 10–15 minutes. Serve with the remaining lime slices.
