Ingredients
- 4 cod fillets (about 180 g each)
- 2 sprigs parsley
- 60 g breadcrumbs
- Salt
- ground pepper
- 1 tbsp Olive Oil

Preheat the oven to 220°C with fan and top heat.

Rinse the cod fillets and pat dry. Rinse the parsley, pat dry, finely chop the leaves and mix with the breadcrumbs. Season both sides of the fish with salt and pepper and place on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle with breadcrumb mixture. Bake in the oven for 10-15 minutes until golden brown.
