Ingredients

  • 16 cannelloni
  • Salt
  • 500 g Cod fillet
  • 1 egg (medium size)
  • 100 g crème fraîche
  • 1 Carrot
  • 2 Spring Onions
  • thyme
  • 1 tbsp capers
  • pepper from grinder
  • 100 g grated Edam cheese

Instructions

    Cook the cannelloni according to package instructions in salted water. Drain, rinse with cold water and pat dry on kitchen paper.

    Coarsely dice the cod fillet and pulse it in an electric food processor until chunky. Stir in the egg and crème fraîche. Peel and finely dice the carrot. Trim, rinse and finely chop the spring onions. Strip thyme leaves from stems. Mix carrot, onions, thyme, capers into the fish mixture and season to taste.

    Fill the cannelloni with the fish filling. Arrange them in a baking dish. Sprinkle grated Edam cheese over the top. Bake in a preheated oven at 200 °C (or 180 °C fan) for about 30 minutes.
