Coconut Waffles with Ice

Ingredients
- 1 untreated lime (grated zest)
- 5 limes
- 80 g sugar
- 80 ml white wine
- 1 Egg white
- 100 g crème double
- 150 g soft butter
- 150 g sugar
- 4 eggs
- 250 g flour
- 1 tsp Baking powder
- 1 tsp cinnamon
- 4 tbsp shredded coconut
- 2 tbsp candied, finely chopped pineapple pieces
- pineapple juice
- oil (for the waffle iron)

For the lime ice, bring sugar and wine to a boil while stirring, then add lime zest and let cool.

Squeeze all limes. Beat the egg white halfway stiff. Lightly whip crème double.

Add lime juice to the wine mixture and stir; fold in crème double and beaten egg white. Pour into a shallow metal bowl and freeze for about 4 hours, stirring occasionally (or finish in an ice cream maker).

For the waffles, beat butter with sugar until fluffy. Gradually add eggs, whisking until smooth and airy. Add flour, baking powder, cinnamon, candied pineapple, and shredded coconut; mix with hand mixer hooks. If dough is too thick, fold in a little pineapple juice. Preheat waffle iron, brush with oil, and cook waffles until golden yellow. Keep finished waffles warm in the oven at 70°C.
