Coconut Lime Cream

Ingredients
- 400 ml coconut milk
- 2 tbsp Cornstarch
- 80 g cane sugar
- 2 untreated limes
- 200 ml coconut cream

Take about 100 ml of the coconut milk and whisk in the cornstarch until smooth. Bring the remaining coconut milk with the sugar to a boil.

Wash the limes hot, grate the zest and squeeze out the juice. Add the lime juice with half of the zest to the coconut milk.

While stirring, pour in the prepared starch mixture. Let it thicken into a creamy consistency for several minutes. Remove from heat and let cool. Chill completely in the refrigerator.

Whisk the coconut cream until fluffy and fold it into the coconut-lime mixture. Pour into bowls and garnish with the remaining zest before serving.
