Coconut Curry Chicken Salad

Ingredients

  • 500 g chicken breast fillet (4 chicken breast fillets)
  • Salt
  • Pepper
  • 4 tbsp oil
  • 1 tbsp Sesame seeds
  • 1 cucumber
  • 1 ripe Mango
  • 1 red chili pepper
  • 0.5 head iceberg lettuce
  • 100 ml coconut milk
  • 0.5 tsp Curry Powder
  • 2 tbsp Lime juice

Instructions

    Wash the chicken and pat dry with kitchen paper. Season with salt and pepper, then sear in 2 tablespoons of hot oil for about 6 minutes on each side. Sprinkle sesame seeds just before finishing. Remove the fillets and let them cool. Wash the cucumber and slice into rounds. Peel the mango, remove the pit, and cut into strips. Clean the chili pepper, wash it, and finely chop. Rinse the iceberg lettuce, drain, and shred into strips.

    Slice the chicken fillets and combine with cucumber slices, mango, lettuce, and chili in a bowl. Whisk together coconut milk, curry powder, lime juice, salt, pepper, and remaining oil; taste and pour over the salad.
