Portuguese-Style Squid Salad with Bell Peppers and Olives

Ingredients
- 2 yellow bell peppers
- 1 onion
- 2 Garlic cloves
- 500 g squid rings (fresh or frozen)
- 6 tbsp Olive oil
- Salt
- black pepper (ground freshly)
- 200 ml dry white wine
- 80 g pitted black olives
- parsley
- 3 tbsp Lemon juice
Instructions

Thaw frozen squid rings, rinse fresh ones and drain.

Wash, deseed, and cut bell peppers into bite-sized pieces, removing all white membranes.

Peel and finely dice onion and garlic.

Heat 3 tbsp oil in a pan, add pepper pieces, sauté for about 5 minutes, then set aside. Add garlic, onion, and squid rings to the pan, briefly brown, season with salt and pepper, pour in wine, and simmer for 2–4 minutes until slightly reduced.

Slice olives into rings.

Whisk together olive oil, lemon juice, salt, and pepper; taste and adjust seasoning.

Combine olives, peppers, parsley, and squid rings with the dressing, stir well, and serve warm.
