Ingredients
- 600 g Chicken breast fillet
- Salt
- pepper (ground)
- 2 tbsp Lime juice
- 3 tbsp Flour
- 1 handful coriander leaves
- 2 Eggs
- 80 g coconut flakes
- 60 g panko breadcrumbs
- vegetable oil for frying (or peanut oil)
Instructions

Rinse the chicken, pat dry and cut into bite-sized pieces. Season with salt and pepper and drizzle with lime juice. Coat in flour.

Rinse the coriander leaves, shake dry, pluck and finely slice. Beat the eggs in a bowl with the coriander.

Mix coconut flakes with panko in another bowl.

Coat the chicken cubes with the egg mixture and then dredge in the coconut-panko blend.

Fry portions in hot oil for 3-4 minutes until golden brown. Drain on paper towels and serve.
