Ingredients

  • 1 small chicken (about 500g)
  • 3 tbsp butter
  • 450 ml coconut milk
  • 1 onion
  • 3 Garlic cloves
  • 0.5 bunch Parsley
  • 1 green elongated bell pepper
  • 2 canned tomatoes
  • 1 Avocado
  • 1 tsp lemon juice
  • Salt
  • Pepper

Instructions

    Wash and pat dry the chicken, then cut into eight pieces. Peel and halve the onion, slice into rings; wash the pepper and slice into thin rings. Finely chop the parsley and garlic.

    Sauté onions and garlic in butter, add chicken pieces and brown them on all sides. Pour in coconut milk, cover, and simmer over medium heat for 45 minutes, seasoning with salt and pepper.

    Wash tomatoes and cut into slices. Halve the avocado, remove the pit, slice into wedges and drizzle immediately with lemon juice.

    Arrange chicken on a plate with tomatoes, pepper rings, and avocado. Stir parsley into the sauce and pour it over everything.
