Lamb Shank with Orzo and Green Beans

Ingredients
- 4 shallots
- 2 Garlic cloves
- 4 small lamb shanks
- Salt
- Pepper (freshly ground)
- olive oil
- 200 ml red wine
- 400 ml lamb stock
- 2 sprigs Rosemary
- 4 sprigs thyme
- 200 g black olives (pitted as desired)
- 500 g green beans
- 250 g orzo pasta (Greek pasta)
- 2 tbsp chopped chives
- rosemary for garnish

Preheat the oven to 160°C with fan and top heat.

Peel the shallots and garlic, slice into rounds. Pat the lamb shanks dry, season with salt and pepper, then sear in 2 tbsp hot oil in a braising pot on all sides. Remove from pot, briefly sauté the shallots and garlic, deglaze with wine, add some stock. Return the shanks, add herbs, cover and braise in the preheated oven for about 2 hours, adding remaining stock as needed and turning the shanks regularly. During the last 30 minutes, scatter the olives.

Wash and trim the green beans, cook in salted water for about 8 minutes until tender. Shock in ice water, drain, then toss in 2 tbsp olive oil over heat.

Cook the orzo in salted water until al dente, drain, and toss with 2 tbsp olive oil and chopped chives.

Remove the lamb from the pot and let rest wrapped in foil. Reduce the sauce if desired, remove herb sprigs, taste and adjust seasoning. Plate the shanks with the orzo and green beans, garnish with rosemary, and serve.
