Ingredients
- 300 g chicken breast fillet
- 40 g fresh ginger (1 piece)
- 1 Garlic clove
- 1 bunch spring onions
- 1 tbsp neutral plant oil
- 150 ml unsweetened coconut milk (canned)
- Salt
- ground pepper
Instructions

Rinse the chicken breast fillets cold, pat dry and cut into thin strips. Peel and finely chop the ginger and garlic. Trim and wash the spring onions, cutting them diagonally into about 2 cm pieces.

Heat the oil in a non-stick pan. Fry the chicken strips while stirring over medium heat for about 5 minutes until golden brown.

Add ginger, garlic and spring onions to the chicken and fry together for about 2 minutes. Pour in the coconut milk and bring everything to a boil. Season with salt and pepper. Serve with basmati rice.
