Ingredients
- 400 g beef (from the loin)
- 1 red bell pepper
- 4 kaffir lime leaves
- 2 basil leaves
- 400 ml coconut milk
- 1 tbsp red curry paste
- 80 g bamboo shoots (sliced, canned)
- 1 tsp palm sugar
- 3 tbsp Fish sauce
Instructions

Slice the beef into thin strips. Wash the bell pepper, remove stem and seeds, then quarter it. Wash the kaffir lime leaves and basil, pat dry and chop them.

Simmer 100 ml coconut milk with the curry paste over medium heat until slightly reduced. Add the beef and bamboo shoots, stirring to warm through.

Add sugar, fish sauce, kaffir lime leaves and the remaining coconut milk; bring to a brief boil. Season with basil and serve garnished with bell pepper slices.
