Clear Vegetable Soup with Broccoli

Ingredients
- 500 g broccoli
- 1 onion
- 1 Garlic clove
- 2 carrots
- 2 Potatoes
- 2 Celery stalks
- 2 small zucchini
- 4 tomatoes
- 2 tbsp olive oil
- 1 bay leaf
- 1 sprig thyme
- 1.2 l Vegetable broth
- Salt
- ground pepper

Break the broccoli into florets, wash them and cut off the thick stems. Peel the stems and slice them. Peel and finely dice the onion and garlic. Peel, wash and cube the carrots and potatoes. Wash, trim and slice the celery and zucchini as well. Briefly blanch the tomatoes, cool, peel, quarter, core and dice the flesh.

Heat the oil in a pot, sauté the onion, garlic, carrots, broccoli stems, potatoes and celery for a few minutes while stirring. Add the bay leaf and thyme, pour in the broth, bring to a boil and simmer covered for about 15 minutes. Then add the broccoli florets, zucchini slices and tomatoes and cook the soup for another 10 minutes. Season with salt and pepper and serve on plates.
