Soup with semolina dumplings from Spoonsparrow is a classic starter that always comes in well!

Ingredients

  • 40 g soft butter
  • 60 g whole wheat semolina
  • 1 egg
  • Salt
  • nutmeg
  • 1 l meat broth
  • Pepper
  • 1 Carrot
  • 2 tbsp watercress

Instructions

    For the semolina dumplings, cream the butter until fluffy, add a bit of semolina, then the egg and the remaining semolina to form a smooth dough. Season with salt and nutmeg and let it rest for about 10 minutes.

    Bring the broth to a boil and season with salt and pepper.

    Using two teaspoons dipped in water, scoop portions from the dough and shape them into long dumplings. Drop them into the boiling broth and simmer gently for about 15 minutes. Peel and finely grate the carrot, adding it during the last 2 minutes of cooking. Ladle the soup with dumplings onto bowls and sprinkle with watercress before serving.
