Classic lentil stew from Spoonsparrow: Thanks to the fiber from the lentils and potatoes this keeps you full for a long time and supports your gut health.

Ingredients

  • 600 g lentils
  • 400 g Potatoes
  • 2 bunches soup greens
  • 30 g Butter
  • 1 l vegetable broth
  • 0.5 bunch Parsley
  • 2 tbsp vinegar
  • 2 bratwurst sausages

Instructions

    Wash lentils in cold water and drain well.

    Wash, peel, and dice the potatoes. Clean, wash, peel if needed, and dice the soup vegetables.

    Heat butter in a pot, briefly sauté the potatoes and vegetable cubes. Add lentils and pour in broth. Cover and simmer on low heat for about 40 minutes.

    Meanwhile slice the sausages and add them to the stew to warm through. Season with salt, pepper, and vinegar. Wash parsley, shake dry, and roughly chop. Serve the classic lentil stew garnished with parsley.
