Classic Goulash with Paprika and Pasta

- 750 g beef goulash cubes
- 2 tbsp olive oil
- 2 onions
- 2 Garlic cloves
- 2 Tbsp paprika powder
- 400 ml meat broth
- 200 g diced tomatoes (canned)
- 0.5 tsp ground cumin
- Salt
- Pepper
- 2 red bell peppers
- 300 g wide pasta
- 2 tbsp crème fraîche

Brown the beef cubes in a pot with hot oil in batches, then remove them. Peel and finely dice the onions and garlic, and sauté briefly in the same pot. Return the beef, sprinkle with paprika powder, and deglaze with meat broth. Add the tomatoes and season with cumin, salt, and pepper. Cover and simmer gently for about 1 hour, stirring occasionally. Wash, halve, seed, and cube the bell peppers; add them to the goulash and continue cooking for another ~30 minutes. If needed, add more broth.

Cook the wide pasta in salted water until al dente, drain, and arrange on plates. Finish the goulash with crème fraîche, adjust seasoning with salt and pepper, pour over the pasta, and serve.
