Citrus Bundt Cake

Ingredients

  • 250 g butter
  • 250 g sugar
  • 1 packet vanilla sugar
  • 6 Eggs
  • 500 g flour
  • 1 packet baking powder
  • 0.125 l milk
  • juice of one lime
  • 80 g candied citrus peel
  • 1 untreated lime
  • lemon leaf
  • powdered sugar (for dusting)
  • butter (for the pan)
  • breadcrumbs (for the pan)

Instructions

    Grease and dust a bundt pan with breadcrumbs. Cream butter, add sugar and vanilla sugar, whisk until creamy. Gradually fold in eggs until sugar dissolves.

    Sift flour and baking powder together, gradually mix into batter, adding 4 tablespoons of milk, then sift more flour and repeat until smooth.

    Fold in lime juice and finely chopped candied citrus peel. Pour batter into pan, level surface, bake at 175°C for 50 minutes.

    Cool, unmold, dust with powdered sugar, garnish with lime slices and lemon leaves.
