Ingredients
- 400 g grated almonds
- 3 egg whites
- 300 g sugar
- 1 tsp lemon juice
- 1 tbsp cinnamon
- 0.5 untreated lemon (grated zest)
- 0.25 tsp cloves powder
- 0.25 tsp allspice
- 1 tbsp cocoa powder
Instructions

Beat the egg whites very stiff and sift in the sugar, then fold in the lemon juice at the end. Put 4 tbsp of the glaze into a bowl, cover with foil, and refrigerate.

Add almonds, spices, half of the cocoa, and lemon zest to the foam mixture and gently fold in. Dust the work surface with sugar and shape the dough.

Roll out about 4 mm thick. Cut out stars, dipping each mold repeatedly in sugar. Place the stars on a parchment-lined baking sheet. Stir the remaining cocoa into the glaze. Brush the stars with glaze and bake at 180°C for about 12 minutes. Cool on a wire rack.
