Cinnamon Stars Without Alcohol
The cinnamon stars without alcohol by Spoonsparrow taste great for the whole family and are also a delight for the little ones.
Ingredients
- 250 g ground almonds
- 2 tsp cinnamon powder
- 375 g powdered sugar (and extra powdered sugar for dusting)
- 4 egg whites (size M)
- powdered sugar or ground almonds for dusting

Sift the almonds onto the work surface and form a shallow well in the center. Sprinkle the cinnamon over the almonds, then add 250 g powdered sugar and 3 egg whites into the center. Knead from the center until the dough no longer sticks excessively to your hands; if necessary, add more almonds.

Wrap the dough in plastic wrap and refrigerate best overnight (at least 4 hours).

Roll out the dough on a lightly dusted work surface to about 5 mm thickness. Chill again briefly.

For the glaze, place the remaining egg white in a bowl. While stirring, gradually sift in the rest of the powdered sugar until a thick pourable glaze forms.

Take the dough from the fridge and spread a thin layer of glaze (about 4–5 tablespoons) over it. Refrigerate for another hour.

Preheat the oven to 200 °C fan‑forced. Line a baking tray with parchment paper.

Use a star cutter to cut shapes from the dough. If the dough sticks, dip the cutter briefly in hot water before cutting again.

Place the stars on the tray and bake for about 10 minutes with the oven door slightly ajar.

The glaze should stay as white as possible, only taking a slight tint on the underside.

While the cookies are baking, knead any leftover dough with a few ground almonds and shape into additional cookies, brushing them with the remaining glaze.

Remove from the oven and let cool on the tray.
