Cinnamon Ice Cream with Dates

Ingredients
- 250 ml milk
- 75 g sugar
- 1 tsp cinnamon powder
- 4 egg yolks
- 250 ml Whipping Cream
- 100 g dates (pitted)
- 1 tsp cocoa powder
- 1 lemon (juice)
- 1 tbsp orange blossom water

Whisk the milk with sugar, cinnamon and egg yolks over a hot water bath until creamy. Remove from heat and stir cold (possibly in ice water). Beat the cream stiff and fold into the mixture. Freeze in an ice cream maker until creamy or place in a shallow bowl in the freezer while stirring occasionally.

Chop the dates and mix with cocoa, lemon juice and orange blossom water; let steep for about 20 minutes. Then puree finely with a hand blender.

Gently fold the date cream into the ice cream base and freeze in the freezer for at least another 30 minutes until firm.

Serve by scooping balls and garnish with rose jelly, pistachios and rose petals as desired.
