Ingredients
- 200 g fresh salmon fillet (ready-to-cook, skinless)
- 1 Shallot
- 2 tbsp grape seed oil
- 0.5 untreated lime (zest and juice)
- Sea salt
- pepper (from grinder)
- 4 slices toast bread
- 100 g watercress
- 2 tbsp cranberry sauce
- 2 tbsp herb cream cheese

Wash the salmon fillet, pat dry and dice very finely. Peel the shallot, finely chop it and mix with lime zest, lime juice and grape seed oil into the salmon. Season with sea salt and pepper.

Using a star-shaped cookie cutter, cut one large star from each slice of toast, leave the cutter around the star and fill the stars with salmon tartare. Carefully lift the cutter and arrange the salmon star shapes on a plate. Garnish with watercress leaves, a few drops of cranberry sauce and a corner of herb cream cheese.
