Christmas Kaiserschmarrn

Ingredients

  • 100 g spelt flour
  • 200 g wheat flour
  • 75 g ground almonds
  • 6 Eggs
  • 1 pinch salt
  • 500 ml milk
  • butter for frying
  • powdered sugar for dusting

Instructions

    Add the flours to a bowl and whisk in about 400 ml of milk until smooth. Separate the eggs; add the yolks to the batter, then beat the whites with the salt into stiff peaks. Stir the almonds and yolks into the batter, adding more milk if needed to achieve a thick yet pourable consistency.

    Fold in the beaten egg whites. Heat some butter in a non-stick pan and ladle 1–1½ ladles of batter into it. Cook over medium heat until the surface starts to dry. Flip the omelette using a lid, cook the other side, then break it into pieces with a second spatula and transfer to an oven-safe dish. Keep warm at 80 °C while you finish cooking the remaining batter.

    When all batter is used, spread the Kaiserschmarrn onto plates and dust with powdered sugar before serving.
