Christmas Cookies with Icing
In the Christmas bakery... the Christmas cookies with icing from Spoonsparrow should definitely not be missing!
Ingredients
- 150 g Spelt flour Type 1050
- 80 g whole cane sugar
- 100 g softened butter
- 1 packet vanilla sugar
- 1 pinch salt
- 30 g ground pistachios
- 50 g ground almonds
- 1 tbsp grated lemon zest
- 1 egg yolk
- 120 g powdered sugar from whole cane sugar
- 2 tbsp lemon juice
- silver sugar pearls
Instructions

Knead everything except powdered sugar, lemon juice and silver sugar pearls with the dough hook of a hand mixer into a dough, shape it into a ball and wrap in foil. Chill for about 1 hour.

Roll out the dough on a floured work surface between two sheets of cling film to a thickness of about 5 mm. Cut small fir trees from the dough and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2‑3) for about 10 minutes, remove and let cool.

Whisk powdered sugar with lemon juice into a thick icing (if desired the icing can be colored with food coloring). Brush the fir trees with the icing, decorate with silver sugar pearls and allow to dry.
