Chopped Tuna with Avocado

Ingredients
- 1 ripe Avocado
- 1 lemon (juice)
- olive oil (cold pressed)
- Salt
- Pepper (freshly ground)
- 400 g tuna fillet (sushi quality)
- balsamic vinegar
- 8 tbsp candied ginger (sprinkled with sugar)

Peel the avocado, halve it and dice into small cubes. Toss with lemon juice, 1 tbsp olive oil, salt and pepper.

Wash the tuna fillet, pat dry and finely dice or chop with a very sharp knife. Season with salt and pepper.

Heat a non‑steroidal pan and sauté the finely chopped ginger until the sugar melts; remove immediately.

Fill four square molds (for timbales) with 1–2 tbsp candied ginger, then add tuna and finally avocado. Press gently with a flat hand and carefully transfer into square bowls.

Whisk together 5 tbsp olive oil, 3 tbsp balsamic vinegar, 2 tbsp water, salt and pepper to make a vinaigrette; drizzle 1–2 tbsp over the tartare. Garnish with microgreens if desired and serve immediately.
