Chocolate Tart

Ingredients
- 300 g flour
- 1 tbsp sugar
- a pinch salt
- 200 g butter
- 1 egg
- 200 g dried legumes (for blind baking)
- 225 ml whipping cream
- 2 tbsp sugar

- 120 g soft butter
- 500 g chocolate (60-70% cocoa content)
- 75 ml milk
- cocoa powder (for dusting)
- 2 tbsp melted chocolate glaze

Knead flour, sugar, salt, butter and egg into a shortcrust dough, wrap in foil and chill for 1 hour. Preheat the oven to 200°C. Line a tart pan with the dough. Raise the edges well and cut off the top edge. Pinch small holes in the dough with a fork and cover with parchment paper and dried legumes. Bake in the hot oven for 20-25 minutes until golden yellow. Remove the beans and let the tart base cool completely.

Chop the chocolate. In a pot, combine whipping cream, milk, sugar and a pinch of salt and bring to a boil. Pour over the chocolate and stir until the chocolate has fully melted. Let the mixture cool slightly, then fold in butter pieces until a smooth, glossy mass forms. Spread the mixture with a spatula over the baked and cooled tart base. Gently shake the cake side to side so the filling distributes evenly, let it cool, then refrigerate for 4 hours. Dust with cocoa powder. Decorate with hearts of chocolate glaze and serve.
